Vegan Berry Scones with Lemon Icing

Scones always seemed a bit intimidating for me to make.

 

Somewhere between a biscuit and a cake, these delicious, buttery pastries can be made sweet or savory and enjoyed at any time of the day.

 

They sound and look fancy, plus you don’t always see them everywhere like cakes and muffins, making them seem a bit more elite.

 

However, they’re really not all that complicated to make, and with this recipe, you can enjoy the sophisticated flavor of berry scones with lemon icing with around ten ingredients!

 

 

Freeze your stick of butter, then grate it

 

 

Trust me, you don’t want to miss this step.

 

Sure, cakes and other sweet treats may call for butter at room temperature. However, scones (and pies and other flaky pastries) are better made with frozen butter.

 

Refrigerated butter melts into the dough too much during the mixing process, making the scones less flaky and chewier.

 

 

Frozen butter, on the other hand, creates small buttery slivers throughout the batter that causes the dough to puff around the butter, resulting in a flakier pastry.

 

Simply grate the frozen butter right into the flour to create those lovely buttery layers.

 

Then, mix in the wet ingredients, fold in the berries, and roll into triangle shapes.

 

 

Why you’ll love these scones!

 

These scones require only 11 relatively inexpensive ingredients, many of which you might already have in your pantry or refrigerator.

 They only require about 15 minutes of preparation time. Then, you let the scones do the work for you, whether it is settling in the refrigerator, baking in the oven, or cooling post-bake.

 

You can adjust this recipe to incorporate any scone flavor you like. Here are some ideas for recipe substitutions:

 

  • To change the lemon icing to a simple vanilla icing, replace the lemon juice with plant milk

 

  • To make any other sweet flavor, substitute berries for ingredients like chocolate chips, chopped nuts, or dried fruits

 

  • For more savory scones, reduce sugar to two tablespoons and remove vanilla.  Next, add ingredients like one teaspoon black pepper, two cloves of minced garlic, ¼ cup herbs, and/or ½ cup cheese (plant-based cheese works here too!)

Vegan Berry Scones with Lemon Icing

Prep Time: 15 minutes
Cook Time: 25 minutes
Additional Time: 30 minutes
Total Time: 1 hour 10 minutes

Sweet, flaky berry scones drizzled with a tart lemon icing: a winning pastry to serve with tea and coffee at any event

Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tbsp ground flaxseeds
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 3/4 cup plant milk
  • 1 tsp vanilla
  • 3/4 cup frozen or fresh berries
  • 1/2 cup frozen vegan butter (equivalent to one stick of butter)

Lemon Glaze

  • 1 cup powdered sugar
  • 1/2 tsp vanilla 
  • 2 tsp lemon juice

Instructions

  1. Place your stick of butter in the freezer and freeze for at least one hour
  2. Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper
  3. Combine the dry ingredients (all-purpose flour, baking powder, ground flaxseeds, salt, and sugar) together in a big bowl
  4. Using a shredder, grate the stick of butter into the dry ingredients bowl. Mix in until the mixture resembles small, pea-sized crumbs (see image in article above)
  5. Stir in plant milk and vanilla until just combined. Fold in the berries
  6. Pour the scone dough onto a floured counter and work the dough into a ball
  7. Press the dough into a one-inch disk and with a sharp knife, slice into 8 triangles
  8. Place the triangles on the baking sheet, brush with plant milk, and refrigerate for around 20 minutes
  9. Bake for 22-25 min or until the scones are lightly browned on top
  10. Let the scones cool for at least 10 minutes before drizzling with lemon icing


Lemon Glaze

  1. Whisk the powdered sugar, vanilla, and lemon juice in a bowl until smooth
  2. Add more lemon juice to thin it out or more powdered sugar for thicker icing
  3. To store leftover icing, cover and place in the refrigerator for up to three days

Notes

If you prefer a traditional vanilla icing, substitute the
lemon juice with plant milk
