I take my fruits and vegetables pretty seriously.

 

As a nurse, I’ve learned that the best way to make sure you get enough of your veggies in is by filling up half of your plate with them.

 

This tip has worked very well for me so far, as I end up consciously ensuring that I have some kind of vegetable or green available for almost every meal I have.

 

 

Fill up your plate with salad that is actually tasty!

 

Salad definitely has a bad rap.

 

It’s been called boring, unappetizing, flavorless, you name it.

 

But oh no, not anymore.

 

This Mediterranean salad is the perfect candidate for filling up half your plate with a delectable veggie concoction!

 

It is very simple to make and is packed with fresh, delicious flavor that will complement almost any meal you have.  

 

Dice up your veggies for maximum flavor potential

 

The only thing I ask of you in this recipe is to please, please, dice up those veggies!

 

I recommend dicing up your veggies because the smaller pieces allow for more of the olive oil, salt, and pepper to marinate each and every bite.

 

As you create and recreate this salad, feel free to experiment with different veggies and herbs such as dill, bell pepper, radishes, green onion, leafy greens, and avocado.

Finely diced veggies with parsley tossed with olive oil, lemon, salt, and pepper. A very simple side salad that bursts will flavor and makes eating your daily veggies that much more enjoyable!

Ingredients

  • 2 tomatoes diced
  • 1/2 large  cucumber diced
  • 1/2 red onion diced
  • 1/2 lemon squeezed
  • handful of chopped parsley
  • 1 tsp olive oil
  • salt and pepper to taste

Optional

  • 4-6 olives sliced

Instructions

After dicing up your veggies, combine everything in a large
bowl.


Add in olive oil and salt and pepper to taste. That’s it!
