One Bowl Vegan Banana Bread

Banana bread, oh banana bread.

 

If you’re looking for a healthy, plant-based spin on the classic banana bread, you’ve come to the right place.

 

This banana bread is moist, fluffy, and subtly sweet with a rich banana flavor.

 

It is also completely plant-based, low in refined sugar, and very easy to make.

 

 

This bread is bananas

 

Unsurprisingly, the key ingredient in this delicious breakfast loaf is the banana.

 

You have to make sure that the bananas are completely ripe to make the most delicious banana bread and get the most bang for your buck in terms of natural sweetness.

 

The bananas should be a deep yellow, speckled with black spots like the image below.

 

 

Additionally, ripe bananas have more antioxidants and natural sugar than when they are very firm and green.

 

Therefore, if you buy your bananas green, make sure to let them ripen for a few days before using them in banana bread.

 

One bowl for maximum simplicity

 

This recipe uses just one bowl, making it a lot simpler than the standard two-bowl, one wet and one dry setup. Here, we first combine the wet ingredients and then we mix in the dry ingredients.

 

However, when you add the flour to the wet ingredients, you have to be very careful not to overmix the batter.

 

Over mixing the flour with the liquid ingredients will activate the gluten protein, resulting in a bread that may be too tough and chewy.

 

Thus, I recommend mixing just until you can no longer see chunks of flour, like the image below.

Plain banana bread is delicious, but adding in extra goodies makes every bite so much better.

 

For example, walnuts and chocolate chips are a classic add (and my personal favorite).  Additionally, other toppings such as dried fruit, coconut flakes, and pecans work very well, too.

A vegan banana bread recipe using one bowl that is simple, healthy, and delicious.

Ingredients

  • 4 ripe bananas
  • 2 cups all-purpose flour
  • 1/3 cup oil (grape seed, olive, vegetable)
  • 1/3 cup sugar
  • 1/2 cup non dairy milk (oat, almond, soy, coconut)
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1/2 tsp baking soda

Optional Add-Ins

  • 1/2 cup chocolate chips
  • 1/2 cup nuts (walnuts, pecans, sliced almonds)
  • 1/2 cup dried fruit (cranberries, raisins, blueberries)
  • 1/2 tsp cinnamon 

Instructions

    1. Preheat oven to 350 degrees Fahrenheit and line a loaf pan with parchment paper
    2. Mash up the bananas in a large bowl using a handheld masher or a fork
    3. Mix in sugar, oil, vanilla extract, and non dairy milk
    4. Stir in baking soda, baking powder, and flour. Stir just until combined, being careful not to over mix the batter
    5. With a large spoon, fold in your optional add-ins (chocolate chips, nuts, dried fruit, cinnamon)
    6. Pour batter into loaf pan and bake for 55-60minutes or until a toothpick inserted in the center comes out clean
    7. Let cool for 20 minutes and enjoy!

Notes

Once fully cooled, you may store the bread in an airtight container for up to five days or in the refrigerator for one week
